The future of food took center stage at the Unilever Food Solutions (UFS) Future Menus 2026 Food Trends Adventure, where hundreds of guests explored emerging culinary trends through a one-of-a-kind food crawl at Foro de Intramuros. Held in partnership with GCash for Business, the event brought together food, technology, and innovation, offering a closer look at how Filipinos may experience dining in the years ahead.
Future Menus 2026 highlighted four major trends shaping the global food landscape: the revival of heritage cuisine, the elevation of street food through refined culinary techniques, the growing influence of borderless cuisine, and the rise of personalized dining experiences. Developed through research and insights from chefs worldwide, the UFS Future Menus report aims to help food businesses turn global trends into practical ideas for their kitchens.

During the food crawl, guests experienced these trends through dishes from 15 participating merchants, including Backyard BBQ, Bigby’s, Bun Run, Caerus, Chotto Matcha, Fiasfud, H Proper, Itamessy, Mezmars & Mau’s, OnlyPans, Poppy’s Halo Halo, Rebel Bakehouse, Sama Sama, Shawarma Ko, and Soriano’s.
Among the highlights was Sama Sama’s Filipino beef pares bao, which showcased the borderless cuisine trend by combining familiar Filipino flavors with an international format. Soriano’s, meanwhile, brought attention to Filipino culinary heritage with its Beef Morcon, a traditional fiesta dish that demonstrated how classic recipes can be reintroduced to today’s diners.
For dessert, Poppy’s Halo Halo reimagined two beloved Filipino merienda favorites, Halo-Halo and Mais Con Yelo. The dishes retained their nostalgic appeal while receiving a more refined treatment through quality ingredients, craftsmanship, and presentation.
Beyond the food, the Future Menus 2026 Food Trends Adventure also highlighted the growing role of digital technology in the dining industry. The event marked the first-ever cashless Future Menus, with GCash for Business serving as the exclusive payment partner from ticketing to transactions at participating merchant booths.
GCash for Business also introduced a Scan-to-Order feature during the food crawl, allowing guests to order and pay directly from their location instead of waiting in line. Food business owners could likewise learn about and apply for SoundPay Plus, a payment solution designed to accept multiple payment methods while providing instant audio confirmation for successful transactions.
With digital payments becoming increasingly integrated into everyday dining, the event demonstrated that the future of food extends beyond what is served on the plate. It also involves how restaurants, food entrepreneurs, and consumers interact through technology.
Through the collaboration between UFS and GCash for Business, the Future Menus 2026 Food Trends Adventure offered a glimpse into a dining future shaped by culinary creativity, Filipino food heritage, global influences, personalization, and digital convenience.
